VIRAL CHEESY POTATO PANCAKES

1. Wash and peel your potatoes.
2. Salt your water, then boil your potatoes for approximately 20 minutes until easily mashable.
3. Drain and mash the potatoes until smooth. Add cornstarch and sugar, plus a teaspoon or so of salt. Mix until a solid dough is formed.
4. Roll about a 1/4 cup of dough into a ball, flatten it with your palms, and place your preferred amount of cheese into the middle. For cheese, I run the mantra “the more the merrier”…
5. Gradually squeeze the outside of the dough into the middle, moulding and compacting it into a sphere.
6. Press down lightly and flatten the cheese-filled ball with your palms, and round the edges to make it a perfectly circular shape (like a pancake).
7. Fill a non-stick pan with vegetable oil until the entire pan gets coated, turn the heat to low, and shallow fry the pancakes for 4-6 minutes on each side.
8. Once golden and crispy on both sides, transfer to wire rack to cool and finish with salt. FYI, if you are a fan, these pair nicely with sour cream and chives. Enjoy and maximize that cheese pull!
