Crispy, melty, and dangerously addictive, this cheesy garlic bread features a homemade roasted garlic and shallot butter, topped with mozzarella and baked to golden perfection. Best served warm, it's a challenge not to eat the whole loaf!
1. Preheat your oven to 375°F (190°C).
2. Slice the tops off the garlic bulbs and shallots. Drizzle them with olive oil, wrap in foil, and roast in the oven for about 1 hour, until softened and aromatic.
3. Once roasted, let them cool slightly. Squeeze the softened garlic and shallots into a bowl, discarding the skins. Add the softened butter, grated Parmesan, paprika, salt, pepper and chopped parsley. Season with salt and pepper, then mix until well combined.
4. Slice the bread in half lengthwise. Spread the garlic butter mixture evenly over both halves or you can do just one half with a thicker layer of butter & cheese! Sprinkle the shredded mozzarella evenly over the buttered bread halves.
5. Place the bread on a baking sheet and bake in the preheated oven for 15–20 minutes, or until the cheese is melted and golden brown.
6. Once out of the oven, optionally sprinkle additional parsley on top and optionally drizzle with honey. Slice and serve warm.
