Start with boiling some water for the pasta. Toss a generous pinch of salt in there and cook according to the package until the pasta is al dente. Be sure to save a cup of pasta water before draining. 2. Prep your chicken by cutting the breasts into 1 inch cubes. Coat the chicken in lemon juice, paprika, salt and pepper. 3. In a large pan, melt 3 tablespoons of butter with 2 tablespoons of olive oil on a medium-high heat. Once hot, add the diced onion and cook for 2 minutes, season with salt and pepper, stirring occasionally. Add the chicken and cook for an additional 4 minutes, stirring often. Add the minced garlic and chili flakes, cook for 1 more minute. 4. Lower the temperature to a medium heat, add the tomato paste and cook for 1 minute, stirring often. 5. Pour in the vodka and scrape the sides of the pan to deglaze. Allow vodka to cook and reduce for 1 minute, then slowly add the cream, mix, then add the mozzarella and parmesan. 6. Mix in 1 tablespoon of maple syrup for a subtle sweetener, add the cooked pasta along with 1 cup of pasta water then mix thoroughly. Optionally top with some fresh basil and extra parmesan cheese. 7. That’s it… enjoy! ✅
