SIMPLE CILANTRO LIME CHICKEN SKEWERS

️⃣ Cut your chicken thighs into large bite-sized pieces. Place the cilantro, garlic, lime zest, mayonnaise, chili powder, pepper, salt, cumin, cayenne, avocado oil, and honey into a blender or food processor.

️⃣ Blend until a paste is formed and reserve two tablespoons for the butter. Mix the remaining marinade with the chicken and lime juice. Toss to coat.  Marinate for as long as your patience can handle - you can do one minute but you can also do overnight (the longer the better the flavor).

️⃣ Preheat the air fryer to 375°F (190°C). Skewer the chicken and cook for 17-20 minutes until fully cooked through. For extra crispy edges, increase the temperature to 400°F (205°C) for the last 2-3 minutes.

️⃣ While the chicken cooks, mix the melted butter with the reserved marinade.

️⃣ Let the chicken rest for 5-10 minutes then baste with the cilantro butter, more fresh cilantro, lime juice and a hot honey drizzle.
