Scallion & Soy Chili Noodles 🔥

1. Bring a large pot of salted water to a boil. Cook the noodles according to package instructions, undercooking by about 30 seconds. Reserve some pasta water, then drain and rinse the noodles under cold water to prevent sticking.
2. In a large pan over medium heat, add the neutral oil and the chopped scallions. Cook for 10–15 minutes until lightly golden and fragrant. Remove the scallions but leave the infused oil in the pan.
3. In a heatproof bowl or pan, combine the sliced fresh scallions, chili flakes, sesame seeds, garlic, shallots, brown sugar, vinegar, soy sauce, dark soy sauce, and the included noodle sauce packet if using.
4. Reheat the reserved scallion oil until very hot. Carefully pour the hot oil over the aromatics and watch it sizzle. Stir to combine.
5. Add the noodles and toss to coat thoroughly. For extra silky noodles, turn the heat to medium-low and mix in 2–3 tablespoons of reserved pasta water until glossy.
6. Turn off the heat. Top with extra scallions and chili crunch. Serve immediately and enjoy.
