Potatoes au Gratin 🧀

1. Preheat oven to 350F.
2. Very thinly slice the potatoes using a mandoline or do so with a knife if you don’t have a mandoline.
3. Melt 3 tablespoons of butter in a large pan. Add the flour and whisk together on low heat for a few minutes.
4. Add the garlic and whisk for an additional minute.
5. Slowly add the milk and then the cream. Whisking continuously as you do so.
6. Then add half a cup of parmesan and half a cup of white cheddar, mixing until fully melted.
7. Using an oven-safe skillet, add the remaining tablespoon of butter. Once melted and hot but not burned, add the onion and cook on medium-high heat for 5 minutes, stirring often.
8. Remove the skillet with the onions from the stove, allow to cool briefly then begin placing your scalloped potatoes on top of the onions using your preferred pattern. There is no right answer here… you can do rows, circles, or something abstract!
9. Pour the creamy sauce all over top the potatoes. Place tinfoil over the potatoes and bake at 350 for approximately an hour and 20 minutes.
10. Remove from the oven and add the remaining half cup of parmesan and white cheddar. Optionally, add some fresh thyme. Broil for 2 minutes until the cheese is golden and crispy on top.
11. That’s it… enjoy ✅
