When your mom says this is the best pasta she has ever had, you know it is a good one… The caramelized shallots, garlic and mushrooms are the perfect complement to the deep flavours of Gochujang (a red Chilli Paste, known as a Korean Staple).
1. Boil the rigatoni according to package instructions. Once done, drain and toss with a teaspoon of olive oil to prevent sticking. Set aside.
2. In a large pan, heat the olive oil over medium heat. Once hot, add the shallots and sauté for 5 minutes. Then, add the garlic and mushrooms and cook for an additional two minutes.
3. Once the mixture looks golden, stir in the Gochujang paste and continue to cook for another two minutes.
4. Slowly add the cream and let the mixture simmer for 3-5 minutes, or until slightly thickened.
5. Serve the sauce over the cooked rigatoni. Garnish with chopped parsley and, if desired, Parmesan cheese. Enjoy this simple yet amazingly flavorful dish!
Tip: Season every layer with a little bit of salt and pepper, this will add a lovely depth of flavor to each bite.
