Episode 2: What’s for Dinner? 😫
Comment “Recipe” and I’ll DM you the recipe card. Every single person I have served this to LOVES it, so here you go…
1. Cook your pasta according to the package. When nearly done, extract some pasta water to save for the sauce. Drain and set aside with a splash of olive oil to prevent clumping.
2. While the pasta is cooking, mix together the seasonings and coat the chicken breasts using cajun, paprika, italian seasoning, garlic powder, salt, and pepper.
3. Add a tablespoon of olive oil to a hot pan along with the seasoned chicken breasts. Cook each side for approximately 6 minutes over medium-high heat, ensuring the chicken does not burn. When the chicken is done and reached an internal temperature of 165F, remove from the pan and set aside to cool. This helps the juices redistribute throughout the meat, enhancing flavor and texture.
4. In the same pan, add the butter and a tablespoon of olive oil. Now add the sliced onion along with chili flakes, salt and pepper, stir often and cook over medium-low heat for 10 to 15 minutes or until the onions look golden. If you are in a rush, you can do this on a higher heat but the onions won’t caramelize as nicely.
5. Add the sliced garlic and cook for an additional 3 minutes, stirring often.
6. Add the chicken broth and bring to a boil. Reduce heat to low and add the cream and parmesan. Cook for another 10 minutes or so then add the pasta water.
7. Slice the chicken on a cutting board along with some fresh parsley, combine with the sauce and cooked pasta. Optionally, top with some extra parmesan, salt, and pepper.
8. And you are done, enjoy! ✅
