Caramelized French Onion Grilled Cheese

1. Slice your onions thinly. In a large pan, melt a couple tablespoons of butter along with a tablespoon or so of olive oil to prevent burning. Add the sliced onions and cook on a low heat for as long as your patience can handle, stirring often. On a real note, try to cook on a low heat for 30 or so minutes. Once the onions are golden and look/smell caramelized, season with a teaspoon of salt and add a tablespoon of red wine vinegar, stirring and cooking for an additional minute. Remove onions from pan and place in a bowl.
2. To make four sandwiches, place four slices of bread down. Add two slices of Gruyère cheese to each slice (or your preferred amount) and top with a spoonful of the caramelized onions, splitting the onions evenly across the sandwiches. Finish with the top slice of bread and be sure to generously butter both sides of the sandwich.
3. Melt an additional tablespoon of butter into a large pan over medium-low heat. Add the sandwiches and cook for 4 or 5 minutes until the bottoms turn golden brown. Flip the sandwiches, press down and cook until the cheese has fully melted and the bottoms turn golden brown, 4 to 5 minutes.
4. That’s it… enjoy ✅
