CAJUN CHICKEN CAESAR SANDWICHES

1. Start by marinating your chicken thighs. If they came bone-in then remove the bone with a knife. Toss the chicken with cajun, salt, garlic powder, pepper, and lemon juice. Place in the fridge while you prep the other stuff. 
2. Heat the netural oil in a pot and once hot, add the sliced onions and cook, stirring occasionally for approximately 5 minutes until golden brown and crispy. Remove, set aside and toss with a pinch of salt. 
3. Make the famous caesar dressing by combining all of the ingredients listed above in a bowl. 
4. Place the chicken thighs skin-side down on a cold pan. Then turn on the heat to medium and cook for approximately 7 minutes on each side or until the chicken is cooked through and the skin is crispy. 
5. Optionally toast the buns with some butter in a pan. Coat the bottom bun with 1 tbsp of dressing, add lettuce then 2 chicken thighs then crispy onions and coat the top bun with 1 tbsp of dressing before topping it off.
