Buffalo Chicken Sliders

1. Season chicken generously on all sides with paprika, garlic powder, onion powder, black pepper, and seasoning salt.
2. Heat avocado oil in a large pan over medium-high heat. Add chicken and cook 4 to 5 minutes per side. Add 2 tablespoons of butter and baste until cooked through. Set aside.
3. Preheat oven to 350°F / 175°C. While chicken is still warm, shred using a stand mixer, hand mixer, or two forks. Add cream cheese, cheddar, 0.5 cup mozzarella or monterey jack, green onions, and buffalo sauce. Mix well.
4. Make garlic herb butter by melting 4 tablespoons of butter with minced garlic and chopped parsley.
5. Assemble sliders: Spread ranch on the bottom buns. Add monterey jack slices, then the buffalo chicken mixture. Pile it on. Optionally, top with 1/3 cup shredded mozzarella or monterey jack. Add top buns and brush with the garlic herb butter.
6. Bake for 10 to 15 minutes until cheese is melted. If baking longer than 15 minutes, loosely tent with foil so the tops don’t burn.
7. Remove from oven, brush with more garlic butter. Dunk responsibly in ranch, buffalo sauce, or both.
